Pheasant with Munthari Jus - Recipe Details

Method

 

Bone out whole Pheasant to give you two single breasts, bone out legs to make a farce.

 

Mix boneless leg meat with ground bush tomatoes and fill up breast.

 

Season the breast and sear quickly then place into oven for 20-25 minutes.

 

Mix a reduction of Chicken Stock with Munthari Berries to serve over breast.

 

Serve with sweet potato mash.
