Mahogany Creek Roast Chicken - Recipe Details
Method
Preheat oven to 180°C, wash and pat dry chicken. Mix horseradish cream with 3 cloves of chopped garlic and 1 tablespoon of chopped parsley. Lift the skin off the chicken and spread the mix over the flesh and replace skin.
Place the chicken on the oven rack over a baking dish of water and lemongrass and cook for approx. 50 minutes per kg.
