Butterfly Quail with Riberry Glaze - Recipe Details
Method
Season and sear Quail quickly on each side then place in hot oven for 10 minutes.
Add to the juices from pan some finely chopped onion, cook until tender then add crushed riberries and chicken stock, reduce until it forms a glaze. Strain and poor over the Quail, add in some whole Riberries for Garnish.
Serve with wilted Spinach.
